Designed from the Inside Out
Every great cookie begins with an idea.
The Structure of a Cookie teaches you to look beyond the recipe and understand how a cookie is built. You’ll learn how ingredients work together to create structure, manage moisture, and determine the texture and stability of the finished cookie.
Using three grain-free cookie formulas as our working examples, we’ll examine what each ingredient contributes, how those contributions interact, and what changes when the formula changes.
The goal isn’t simply to follow a recipe. It’s to understand why the recipe works, so you can create your own cookie.
