Sometimes you just have to take that idea into the kitchen and see where it leads.

That’s what happens here in Granny’s Cookie Lab.

We start with an idea, make a plan, and head into the kitchen to see what we can discover.

Sometimes the result is exactly what we imagined.

Sometimes the ingredients have other ideas.

That’s the fun part.


What’s Happening in the Lab

These are the investigations currently underway.

Lab 01 — Chocolate Biscotti

Can we build a chocolate biscotti that is crisp without becoming hard?

Biscotti has to do something unusual. It needs to hold together well enough to form a loaf and survive slicing, then lose enough moisture during a second bake to become crisp without becoming hard or crumbly.

We’re going to see what happens.

Lab 02 — The Lace Cookie Dessert Cup

Can a delicate lace cookie become a dessert vessel?

We want the lace. We want the delicate texture. But we also want the cookie to become a cup that can hold a filling.

That means it has to spread, stay flexible while warm, take its shape, and then become rigid enough to hold a dessert.

And, of course, it still has to be delicious.

Lab 03 — The Lime Bar Cookie

Can we build a room-temperature-stable lime bar on a coconut base?

We wanted the bright citrus character of a lemon bar, but lemon and coconut don’t quite belong together.

Lime does.

So we’re building from there: a tender coconut base, a bright lime layer, and the question of how the two will behave together as one finished dessert.
