The Question
Can we make a chocolate biscotti with coconut flour?
Biscotti needs to do something very specific. It needs to form a loaf that can be sliced, hold its shape through a second bake, and become crisp without becoming hard, dry, or crumbly.
Coconut flour makes that interesting.
It absorbs aggressively, behaves very differently from wheat flour, and doesn’t provide the same structural framework that traditional biscotti relies on. So the question isn’t simply whether coconut flour can be used in a biscotti recipe.
The question is whether we can design the rest of the cookie around what coconut flour does.
What We’re Trying to Create
We’re looking for a chocolate biscotti that is:
- firm enough to slice cleanly
- strong enough to survive the second bake
- crisp rather than hard
- chocolate-forward
- not dry or powdery
- stable enough to hold its shape
- still enjoyable to eat once fully crisp
Now we have to figure out how to get the ingredients to make it happen.
What We Know
We know coconut flour can create structure, but it also absorbs a great deal of moisture.
We know cocoa will contribute both chocolate flavor and additional dry matter.
We know fat will matter—not simply for tenderness, but for how the dough behaves, how easily it can be shaped and sliced, and how the finished biscotti feels after the second bake.
And we know the sugars will affect more than sweetness. Their behavior in the dough will influence moisture, browning, spread, and the final texture.
But we don’t yet know what combination will give us the biscotti we’re after.

Why These Ingredients?
The first test isn’t about finding the perfect quantities.
It’s about creating a workable system that lets us observe what happens.
Coconut flour gives us the absorbent dry structure. Cocoa adds chocolate and changes the dry balance. The egg provides protein that will set during baking and help give the biscotti its structure. The fats will determine how much tenderness and richness we can introduce without losing the firm structure biscotti requires.
The two sweeteners are selected for different reasons: honey gives the first bake the binding and moisture needed for a cohesive loaf, while palm sugar gives us a drier component that can help the biscotti become crisp during the second bake.
The exact proportions will have to be discovered.
The Plan
Test 1: Build a Baseline
Start with a deliberately simple chocolate biscotti dough using coconut flour, cocoa, eggs, two sugars, and a selected fat system.
The first batch should be treated as a baseline—not as the finished recipe.
We will record:
- how the dough comes together
- how much moisture the coconut flour absorbs
- whether the dough can be shaped into a loaf
- how well the loaf holds its shape
- how cleanly it slices
- what happens during the first bake
- what happens during the second bake
- final crispness
- final tenderness
- whether the biscotti becomes hard, dry, crumbly, or brittle
What We’re Watching
The most important observation may happen before the biscotti ever reaches the oven.
If the dough cannot form a cohesive loaf, the problem may be in the balance of flour, cocoa, egg, fat, and sugar.
If the loaf forms but spreads, we have a different problem.
If it bakes well but crumbles when sliced, we have learned something about structure.
If it slices beautifully but becomes hard after the second bake, we have learned something about moisture and fat.
Each result gives us information for the next build.
The Next Test
The first batch will tell us what needs to change.
We may need more or less fat.
We may need to change the relationship between the two sugars.
We may need to alter the amount of egg or moisture.
We may need to adjust the coconut flour or cocoa.
The point of the Lab is not to guess all of that correctly on the first try.
The point is to make the first test useful.
