Can We Create a Chocolate Biscotti Using Coconut Flour?
Every cookie begins as an idea. Structure gives it form. Ingredients bring it to life.
Biscotti is a particularly interesting cookie to build because its identity is tied so closely to what happens during baking.
Traditionally, biscotti is baked twice. The first bake creates the cookie; the second dries it further, giving it the firm, crisp texture that makes biscotti recognizable—and sturdy enough to dip into coffee or another drink.
So what happens when we remove grains from the equation?
The Question
Can we create a grain-free chocolate biscotti that has the characteristics we expect from biscotti?
We aren’t looking for a cookie that merely resembles biscotti.
We’re looking for the things that make biscotti biscotti:
- a firm, structured cookie
- a dry, crisp texture
- enough strength to withstand a second bake
- a shape that holds together
- a cookie that can be dipped without immediately falling apart
- and, of course, a satisfying chocolate character
The Grain-Free Granny Approach
We don’t begin by asking:
“What can we substitute for wheat flour?”
We begin by asking:
“What does biscotti need to do?”
That changes everything.
Once we understand the structural job the cookie has to perform, we can look at the ingredients differently. Instead of trying to make a familiar recipe work without grains, we can build a cookie system designed from the inside out.
That’s the work of the Lab.
An Open Question
There isn’t one right answer.
The goal isn’t to reproduce Granny’s biscotti. The goal is to discover what makes your biscotti work.
Maybe you want it intensely chocolate. Maybe you want it delicate and crisp. Maybe you want something sturdy enough for a long dunk in your morning coffee.
The Lab gives us a question to investigate.
What we discover from that question is up to us.
