The Cookie Lab: Where Ideas Become Cookies

Every cookie begins as an idea. Structure gives it form. Ingredients bring it to life.

That’s the philosophy behind the Grain-Free Granny Cookie Lab.

We don’t begin with a recipe and ask how to make it grain-free. We begin with the cookie. What do we want it to be? What does it need to do? What kind of structure will allow it to become that cookie?

Then we investigate.

That’s what we teach in The Structure of a Cookie: how to look at a cookie as a system, understand what its ingredients are doing, and use that understanding to work out what happens when we change the equation.

The Lab is where we put that way of thinking to work.

The questions in the Lab are real questions that haven’t been fully answered. We may have a hypothesis. We may have an idea about where to begin. We may know what we want the finished food to accomplish. But we don’t necessarily know exactly where the investigation will take us.

And that’s what makes the Lab different.

You don’t have to have taken the class to join. You don’t have to be trying to reproduce something we’ve already made. You simply need to be interested in the question and willing to investigate it.

A Lab isn’t about following a predetermined recipe. It’s about figuring something out.

Sometimes an idea works. Sometimes it doesn’t. Sometimes the most useful result is the one that tells us what to try next. And sometimes an investigation leads somewhere we didn’t expect.

There isn’t always one right answer. There may be many good cookies hiding inside the same question.

The goal isn’t to make Granny’s cookie.

The goal is to discover what you can create.
